My time back home last weekend motivated me to cook. My Mom and Dad annnnd my brother and sister in law all cook. It made me think “why can’t I?”
While driving back to Dallas I tried to think of something healthy to cook. An actual recipe, not just chicken and veggies on the side. I couldn’t think of anything so I googled “easy healthy recipes.” Stuffed peppers was first on the list. I scanned the ingredients and was surprised to find that I actually had some of the stuff!
I stopped by Central Market and wandered around for a good 45 minutes. I’m slow, I know. My usual list is this: Ozarka water, ritz crackers, and green gum. Sometimes cereal. I think I did an ok job. There were a few speedbumps. I didn’t see any normal looking garlic so I was forced to get whatever was in the box that said “bundled garlic.” I think the box must have been mislabeled because the lady at the cash register typed in a code that was different than my self printed sticker. The next problem was the dang Italian seasoning. Never seen it in my life. I looked over and over. The most interesting part about staring at the spice section was the conversations I overheard. There were so many couples shopping together. One always seemed to be the leader of all things ingredients (read: bossy). I gave up on the Italian seasoning and got some type of season all instead.
Here are some gems from my grocery trip:
I made it back to my place, and went to work washing and cutting the peppers. Cooking the wild rice. Gosh the rice took forever to cook. That was the slowest part.

Cooking the chopped onion and what was supposed to be garlic. Once the onion was cooked, I added the ground turkey, all seasoning, salt, pepper, and a can of crushed tomatoes.
I lined the peppers in my baking dish, filled them with the stuffing. and cooked them on 350 for 30 mins.
They actually turned out pretty well. I added some shredded cheese and a little bit of sour cream with each serving. Nothing a little cheese can’t fix.
I ate the last stuffed pepper last night. Four days worth of dinners. I promise that I’m not able to come up with any recipes on my own. This stuffed recipe was found here on Dear Crissy. Be sure you email or message me if you try this recipe! I’d love to know if you liked it!
